It's not the fact that she edits her photos, it's more so that she is likely editing them after receiving the edited photos to cut out any scars and cuts. She could have just given her editor instructions to edit them out themselves.

Could have, yes. But I can see three reasons why she wouldn't do that.
1) She didn't notice them at first
2) Especially with this one, it is a joint set, so asking the editor do do even more little edits would slow down the process for both of them
3) Its cheaper to tell the editor not to spend time working on little things like that if she feels comfortable enough doing it herself

Then explain why the dimensions of some photos are smaller than others? Sometimes we get 3000x4000 (give or take), but then there are some photos which are half that size. A professional editor would likely be able to avoid making those photos smaller while editing.
