How does his patreon work? Is it 10 dollars for 1 set, or can you see everything he's posted for 10?

you get the set of the month you join. You have to pay extra for any old ones.

This is the reason I stopped pledging each month tbh, no guarantee you'll actually get what you've paid for on time. I'm surprised more people aren't cancelling really
